Cinnamon Caramel Corn with White Chocolate


My friend Valerie gave me a bag of this Cinnamon Caramel Corn with White Chocolate for Christmas.  My two boys and Matt attacked said bag of delicious caramel corn and gobbled up the ENTIRE bag before Valerie even left our house!  Thank goodness I hollered at the boys that I wanted a bite and grabbed a handful while there was still some because they sure weren't planning to leave any kernels behind!

I loved this so much and Valerie promised it was an easy recipe to make, so I decided to include it in the party fare for Violet's shower.  Valerie didn't lie!  It is easy!!  And trust me, if you like caramel corn you will love this!  All the yummy caramely awesomeness of homemade caramel corn blasted into beyond awesomeness by cinnamon and everyone's favorite- chocolate!!

Ingredients:

12 C popped popcorn (I used my air popper, Valerie used light microwave popcorn)
1 C brown sugar
3/4 tsp cinnamon
1/4 C corn syrup
1/2 C butter, cut into small chunks
1 tsp vanilla
1/2 tsp baking soda
3 squares of almond bark
1 C chopped pecans or other nuts (optional)
Directions:
1. Preheat oven to 250 F.  Line a large baking sheet with tin foil.
2. Place 12 C of popcorn and nuts (if using) in a very large bowl.  Set aside.
3. In a microwave safe bowl combine brown sugar and cinnamon. Add chunks of butter and corn syrup. 
4. Microwave mixture on high for 30 seconds. Stir to combine then microwave for 2 minutes. Remove and stir again before microwaving for an additional 2 minutes. Mixture should be hot and bubbly.
5. Add vanilla and baking soda, stir to combine. The mixture will foam and rise.
6. Pour the mixture over the popcorn and stir VERY well until everything is evenly coated.
7. Spread popcorn mixture onto lined baking sheet.  Bake for 30 minutes, stirring every 10 minutes.
8. At the end of the 30 minutes sample a piece of the popcorn.  If it is not crunchy return the pan to the oven for 5 additional minutes.  Repeat this step if necessary.
9. Melt almond bark slowly in microwave and drizzle over popcorn.
10. Once the chocolate has hardened, break the caramel corn into pieces.
