Barbecue Macaroni Salad


I am not typically a macaroni salad person but given my love for new recipes wanted to try this one out :)  The barbecue really adds a lot of flavor, a great thing if you like barbecue and we do!  The original recipe calls for 1 tsp of chili powder.  I started out with 1/2 tsp and liked it so I didn't finish adding the full amount.  I think 1 tsp would be a bit overpowering for my family :)

Quick and easy to prepare this was great side dish for our pork chops!

Barbecue Macaroni Salad  Source: Brenda's Canadian Kitchen

Ingredients:
1 cup elbow macaroni (I used a fun shape that caught my eye in the grocery aisle)
1/3 cup mayonnaise
2 T bbq sauce
2 scallions, sliced thin
1 tsp. chili powder (I used 1/2 tsp)
salt & pepper to taste

Directions:
1. Cook macaroni until tender. 
2. Drain macaroni in colander and rinse with cold water until cool.  Drain briefly, so that macaroni is still moist, then transfer to large bowl. 
3. In a separate bowl combine mayonnaise, barbecue sauce, scallions, and chili powder (you may want to start out with less than the full amount) and toss to combine.  Add to macaroni.  Stir well.
4. Season with salt and pepper.

  2. I have never liked mac salad but I don't see how I wouldn't like this. It has all ingredients in it that I like. I'll give it a try as a bbq side this summer!
