Moving!


Hi everyone!!  Guess what?!?  We are moving!!  Our new house is only about 20 minutes from our old house, so it isn't a far move.  We have been between the two houses a lot the past few days and I am wearing my little men out!  If I could nap on the way home I probably would have as well ;)  I am soo excited about our new house.  I will try and post pictures of my new kitchen (whoo hoo!) sometime.  Once we get Internet set up at the new house I will resume posting recipes too!

Bacon Coleslaw


Pregnancy has me wanting some things that I don't normally make, such as coleslaw.  I like coleslaw but typically just a serving or so is good for me, so I mainly eat it at potlucks or when I am out to eat as a side dish. Mainly places where there won't be leftovers sitting around in my refrigerator.  So for once I made it on my own and actually wanted there to be lots of leftovers so I could snack away on them, but we barely had any leftover!  My husband and I loved this!  So good!  The bacon is perfect.  Not overpowering, just enough that you get a little taste.  It does have a lot of black pepper, so you may want to use a little less and taste it before adding the full amount.

Ingredients:

1/2 bag coleslaw mix
1/4 red onion, diced
1/2 tsp. kosher salt
1/4 tsp. black pepper (You may want to start with less)
1 tbsp. cider vinegar (I used regular white distilled vinegar)
1/3 cup mayonnaise
1 tsp. white sugar
3 pieces of Bacon, cooked and crumbled
Directions:
1. Combine all ingredients except the 1/2 bag of coleslaw mix into a bowl and stir until well combined.
2. Add coleslaw mix and stir until coleslaw is well coated.
*I would suggest doubling the recipe and using a whole bag of coleslaw if you have a large family or are taking this to a potluck.  The coleslaw can be eaten immediately after preparation or refrigerated for later.

Butterfly Cupcakes


With spring fast approaching (YAY!) I wanted to share these Butterfly Cupcakes with you!  I made them for a woman's event at our church and everyone loved them.  As typical for me I used a box mix for the cake (I love the convenience of box mixes, maybe someday I'll start doing it from scratch...) and just added the decorations.  The butterflies are really easy to make.  I used raisins (cut in half or thirds lengthwise) for the antennae, instead of black licorice rope because I didn't have any and didn't want to buy any (we aren't really black licorice fans, are you guys?) Hope you like them!

Ingredients:

1 box cake mix + eggs, water & oil as indicated on box
Your favorite butter cream recipe
Food gel coloring
Pretzels
Circular candies (I used Sprees)
Black licorice rope or raisins (if you use raisins, cut them lengthwise to get a thinner antennae) 

Directions:

1. Prepare and bake cupcakes as indicated on box.
2. Once cupcakes are cool, frost with butter cream.
3. Using a Wilton #12 tip add a frosting body for the butterfly down the center of the cupcake.
4. Add a pretzel at a 45 degree angle on each side of the body, pushing the pretzel slightly into the cupcake.
5. Place a circle candy at the top of the body as a head.
6. Add antennae.
7. Done!
