Rice Krispie Treat Pizza


This is one of those recipes that makes you say "Now why didn't I think of that?!"  Rice Krispie Treat Pizza is everything you love about Rice Krispie Treats plus frosting and candy.  Seriously.  Why didn't I think to do that?  My boys LOVED eating their pizza.  Lincoln was especially excited about the frosting being like the cheese and kept talking about it they way almost 4 year olds do :) 

I wanted to use a combination of Rice Krispies and  Fruity Pebbles for this but ended up running out of both of them and so I added in some Corn Flakes as well.  I didn't measure the cereal amounts I used, but you all know how to make Rice Krispie Treats and I've listed the amounts from the original recipe :)  I wouldn't recommend using all Fruity Pebbles, when you add the frosting and the candies I think it would just be too sweet. (Yes, I can't believe I said that!)

Ingredients:

8 cups Rice Krispie cereal
4 cups Fruity Pebbles
1 stick butter
2 (10.5 oz) bags mini marshmallows
frosting
candy
*I made 1/2 a recipe for a 12" pizza pan
Directions:
1.  Combine cereals in a bowl.  Spray a 16" pizza pan with cooking spray.
2. Make Rice Krispie Treats using your preferred method (I like to use the microwave).
3. Pile Rice Krispie & marshmallow mixture onto the prepared pizza pan.  
4. Spray your hand with cooking spray or use waxed paper to smooth and spread the mixture into the pan.
5. Top with frosting.
6. Decorate with your favorite candy.

Turkey Burgers


I recently had a turkey burger at Ruby Tuesdays and was surprised by how much I liked it.  When I saw these turkey burgers pop up in my Google Reader I couldn't wait to try make them myself!  The burgers had great flavor thanks the Dijon mustard, green onions and cheese.  If you have never tried a turkey burger before this would be an awesome recipe to try!  Please note that ground turkey is different than ground beef and doesn't hold together as well.  The original directions indicate to pan fry and then bake them.  Follow those steps or a George Foreman type indoor grill.  I am not sure if they would hold up really well on the outdoor grill.  I used my regular favorite hamburger toppings on my turkey burger but they are not pictured.  Enjoy!

Ingredients:

1/4 cup panko bread crumbs
1 Tbsp milk
1 pound ground turkey (Megan recommends 7 percent fat, I accidentally got 15% and had to drain the fat from the pan with my burgers...go for 7% :)
1/2 cup grated sharp cheddar cheese
1/4 cup thinly sliced scallions (2 green onions)
3 Tbsp Dijon mustard
Kosher salt and freshly ground black pepper
2 Tbsp olive oil (omit if using a higher % fat ground turkey)

Directions:

1. Preheat the oven to 395 degrees.
2. In a large mixing bowl combine the bread crumbs and milk until all the milk has been absorbed.
3. Add the ground turkey, cheese, scallions and mustard. Season with salt and pepper. Gently mix together by hand until combined, being careful not to over-handle the meat. 
4. Divide and shape the mixture into 4 patties.
5. In a large ovenproof skillet over medium-high heat, warm the oil until a few droplets of water sizzle when carefully sprinkled in the skillet. Cook the turkey burgers until well-browned on both sides, about 3 minutes per side.
6. Transfer the skillet to the oven and cook until the turkey burgers are cooked through and no longer pink in the middle, about 10 minutes.

Potato Dill Chicken


This is one of my 'go-to' dishes when I bring a meal to someone.  The recipe comes from a Mennonite cookbook I got on a day trip with my Grandma.  It is simple to prepare and is different than many of the other dishes the family may receive.  The dill is wonderful and even people who wouldn't identify themselves as dill fans really enjoy it!  Another bonus, the recipe calls for unpeeled potatoes!  Keep those nutrients in and save time by not peeling the potatoes :)

Ingredients:

3 chicken breasts, cubed
6 medium unpeeled potatoes, cubed
1/2 C chopped onion
1 (10 oz) can Cream of Chicken or Cream of Mushroom soup, undiluted
1/2 C sour cream
1/2 C milk
1 tbsp beef bouillon powder
1/2 tsp dill
1/4 tsp pepper
1/2 tsp paprika
Optional- can of mushrooms

Directions:

1. Preheat oven to 375 F.
2. Place chicken, potatoes and onion in the bottom of a greased 9 x 13 pan.
3. In a separate bowl, combine the remaining ingredients.
4. Spread the soup mixture over the potatoes and chicken.
5. Bake for 1 1/4- 1 1/2 hours or until the potato is tender and the chicken is cooked through.
