Frosted Lime Walnut Salad- The recipe I didn't even want to try


Next week we will have been in our new house for 2 months!  We pretty much have all of our stuff put away, we just don't have all the little 'homey' touches done yet that make me feel completely settled in.  My mom came over this week and we hung up pictures in the kitchen. Now that the walls are not completely bare I thought I'd share a few pictures.  I enjoy seeing the kitchens of the blogs I follow so I hope you do too :)

The recipe for today is one of the ones I have framed on my kitchen wall.  I went through my grandma's recipe box and picked out recipes to frame.  One was written by my great-grandma, her favorite recipe, Lemon Pie.   Others were done by my Grandma and most of them I plan to make.  All except for this Frosted Lime Walnut Salad.  I don't like lime jello at all and the other stuff added in just made it worse.  It sounded so gross to me that I thought it deserved a spot on the wall.  It reminds me of growing up and watching that segment on Sesame Street where the game show host says to a contestant, "Would you eat it?!?" and the little girl would respond "Ooh, no it's gross!" but the other contestant always said "I will Bob!"  I am with the little girl on this one!

Ingredients:

Jello Mold:
1 pkg lime jello
1 can crushed pineapple
1 C small curd cottage cheese
1/2 C finely sliced celery
1 tbsp chopped pimiento
1/2 C chopped walnuts

Frosting:
3 oz. cream cheese
1 tbsp mayonnaise
1 tbsp lemon juice

Directions:
1. Dissolve jello in boiling water and cool until syrupy.
2. Stir in remaining ingredients except walnuts and pour into a jello mold. 
3. Chill.
4. Make the frosting: combine all frosting ingredients and beat until smooth.
5. Once the jello has set, frost the top and decorate with walnuts

Would you eat it?  Maybe if I liked lime jello or cottage cheese in jello or celery I would...

No-Fry Fried Ice Cream


Fried Ice Cream is a must for me whenever we eat out at a Mexican restaurant.  I always manage to find a little room for this yummy dessert :)  I had some trouble finding a recipe that I liked for Fried Ice Cream and ended up just coming up with this one on my own.  Matt suggested less cinnamon and more honey on the 'fried' topping.  Our friends who ate this with us said it was perfect as is.  This was surprisingly easy to make and perfect for a hot summer night cookout with our friends.  I hope you enjoy it!

Fried Ice Cream  Source:  An 'A' For Effort

Ingredients:
1.75 quart container vanilla ice cream
4  C corn flakes cereal
1/2 C sugar
3 tsp cinnamon
2 Tbsp honey
chocolate syrup
Reddi-Whip
cherries

Directions:

1. In a ziploc bag coarsely crush the corn flakes.  Add in the sugar, cinnamon and honey. 
2. Smoosh it all around coating the cereal the best you can.  The honey may glob up a bit, just try to break it up.
3. Using a large ice cream scoop, scoop out a ball of ice cream approximately the size of a tennis ball.
4. Drop the ice cream ball into the ziploc bag of coated corn flakes.  Using your hands on the outside of the bag press the cereal onto the ice cream and make it more of a circle shape if it is mis-shapen.
5. Place in a 9 x 13 pan that has a tight fitting lid.
6. Repeat steps 3-5 until you have used all of the ice cream and topping.
7. Put the lid on the 9 x 13 pan and place in the freezer until you are ready to eat it.  I had mine in for about 2 hours but you could probably eat it right away too.
8. Top with Reddi-Whip, chocolate syrup and a cherry before serving.

Strawberries!


In April we moved into our new house.  We initially toured the home in January on the same day a big blizzard hit.  We had no idea what all was going to come up in the yard this spring.  I certainly didn't expect we get strawberry plants!  I've never had a garden or grown even a tomato plant but thanks to plants doing what they do even when we just let them be we had our first strawberries yesterday!  I have watered them twice since we moved in (see, I told you I don't know how to garden!) and am so excited about them that I think we will try to put down some fertilizer that a good friend recommended and water them more :) 

The berries are not large like in the stores but they are super sweet!  We enjoyed eating these on their own but I hope to use some in a recipe as well.  If you have any strawberry recipes you especially like send them my way! 


I think Lincoln was saying something about the strawberries :)
